Watermelon Cucumber Basil Salad Recipe

This salad captures the essence of summer: ripe watermelon, fragrant basil, cooling cucumber, and a touch of sweetness from honey balanced with bright lime. Fresh herbs and a flaky sea salt finish elevate every bite.

I use both sweet basil and lemon basil when available, plus mint cut into thin ribbons for an extra layer of flavor. Persian cucumbers add crunch without excess seeds, and finely shredded Cotija lends a savory contrast to the fruit and honey.

The dressing is deliberately simple — just extra-virgin olive oil, local honey, and freshly squeezed lime juice — so the produce remains the star.

What You Will Need

Watermelon. Choose a ripe, sweet watermelon for the best flavor. Its natural juiciness makes this salad especially refreshing.

Cucumber. Persian cucumbers are ideal for this recipe: thin-skinned, crunchy, and mild. I roughly peel mine to leave a bit of skin for color and texture.

Herbs. Use fresh sweet basil and lemon basil if you can find it, leaving larger basil leaves whole for visual appeal. Stack and roll mint leaves, then slice into thin ribbons for an herbal accent.

Cotija Cheese. Finely shredded Cotija is my preferred salty, slightly crumbly cheese for this salad. It contrasts beautifully with the watermelon’s sweetness; feta is also a good alternative if you prefer.

Extra-Virgin Olive Oil & Honey. A drizzle of good olive oil and a little local honey create a silky dressing that enhances both fruit and herbs. Swap lemon for lime if you like a slightly different citrus note; here lime adds a crisp acidity.

Flaky Sea Salt & Fresh Lime Juice. Flaky sea salt heightens the flavors, while fresh lime juice balances the sweetness and brightens the salad overall.

  • 15 fresh sweet basil leaves
  • 10 lemon basil leaves
  • 8 mint leaves, cut into thin ribbons (stack, roll, and slice)

  • Extra-virgin olive oil, to taste
  • Juice of half a lime
  • Pinch or two of flaky sea salt (adjust to taste)

a while bowl filled with sweet basil, lemon basil and mint, and a jar of honey.

Directions:

  1. Dice the watermelon and cucumbers into bite-sized pieces and place them in a large bowl or on a high-walled serving platter.
  2. Tear the sweet basil and lemon basil leaves and scatter them over the fruit. Add the mint ribbons.
  3. Sprinkle the shredded Cotija cheese evenly over the salad.
  4. Drizzle honey, extra-virgin olive oil, and freshly squeezed lime juice over the salad. You can whisk these three ingredients together first for a more uniform dressing, or drizzle separately for a more rustic finish.
  5. Finish with a couple of pinches of flaky sea salt to lift the flavors.
  6. Serve immediately for the best texture and freshness.

Cheese Alternatives

Choosing a cheese depends on how sweet you like the salad: saltier, tangier cheeses contrast nicely with fruit. Good options include:

  • Feta: A classic pairing with watermelon; tangy and salty, it balances sweetness well.
  • Manchego: A firm, slightly nutty sheep’s milk cheese that works if you prefer a milder savory note.
  • Blue cheese or Gorgonzola: For those who enjoy bold contrasts, blue cheeses pair surprisingly well with sweet fruit.

Storage

Stored in an airtight container, this salad will keep for three to four days in the refrigerator. The watermelon will release some juice over time, so if you plan to store leftovers, consider keeping the dressing separate and tossing just before serving.
