Welcome to this week’s menu plan. I love putting these together because they always make me hungry and I hope they give you fresh ideas and simplify meal prep. The goal is to inspire your taste buds and help your week run a little smoother.
Highlights this week include the ever-popular Ritz Cracker Chicken—a reliable favorite—and a hearty minestrone that’s perfect if you’re craving soup. Friends have asked me to bring the minestrone to dinner more than once, and it even wins over people who think they don’t like minestrone.
We also love breakfast for dinner here. The Breakfast Burrito Skillet Meal delivers all the flavors of a breakfast burrito without needing a tortilla (use one if you prefer). With St. Patrick’s Day approaching, I included the heavenly mint brownie pie as a festive dessert—rich, minty, and indulgent.
