Brownies are one of my favorite desserts. There’s no wrong way to enjoy them: straight from the pan with your fingers, cut neatly with a knife, topped with frosting, or served warm with a scoop of ice cream. Crisp edges and a fudgy center—that’s the goal every time.

For years I searched for a gluten-free, egg-free brownie that actually delivered that gooey, fudgy center. I tried box mixes, technical recipes that involved melting high-quality chocolate, and every egg substitute I could find—applesauce, prunes, commercial egg replacers, and elaborate vinegar-and-baking-soda mixtures. Some versions were fine, but many tasted odd from fruit-based substitutes or turned out cakey instead of dense and fudgy. Finding an allergy-friendly brownie that I’d want to eat with my son felt impossible for a long time.

The turning point was discovering flax eggs. I was hesitant at first: my son couldn’t have seeds for a while, and I worried ground flax might be hard to find. But ground flaxseed is now widely available, affordable, and a simple way to keep baked goods moist and tender. A simple, one-bowl recipe that yields the best gluten-free vegan brownies I’ve made: crisp edges, ultra-fudgy interior, and chocolate-forward flavor. After years of experimenting, this version consistently delivers both texture and taste while remaining allergy-friendly.

Ingredients

  • 1 and 1/2 cups gluten free flour
  • 1 and 1/2 cups sugar
  • 1 cup cocoa powder
  • 1 and 1/2 tsp baking powder
  • 1 tsp xanthan gum (omit if your gluten free flour blend already contains it)
  • 1/2 tsp salt
  • 2/3 cup coconut oil, melted
  • 4 flax eggs (4 tablespoons ground flax mixed with 10 tablespoons warm water)
  • 2 tsp vanilla extract

Instructions

Grease an 8×8-inch square pan and preheat the oven to 350°F (175°C).

In a small bowl, combine the ground flax and warm water. Let sit a few minutes to thicken.

In a large bowl, whisk together the gluten-free flour, sugar, cocoa powder, baking powder, xanthan (if using), and salt until evenly combined and the cocoa is free of lumps.

Add the melted coconut oil, the flax egg mixture, and vanilla extract to the dry ingredients. Stir until a thick, dough-like batter forms.

Press the batter evenly into the prepared pan using greased or slightly damp hands.

Bake 25–30 minutes, or until the edges and top are set and slightly crisp. If you prefer gooey brownies, err on the shorter end of the baking time; for firmer brownies, bake a bit longer.

Allow to cool before cutting into squares. Store leftovers covered at room temperature.

Different flour options

My preferred choice for these brownies is a simple homemade gluten-free flour blend made from three ingredients—rice flour, potato starch, and tapioca starch. It’s easy to make, cost-effective, and avoids reliance on a single brand. If you’d rather buy a ready-made blend, look for mixes with a similar base; Sunset Flour is one store-bought option I’ve found that uses rice flour, potato starch, and tapioca starch and works well here.

Can I cut this recipe in half?

Yes. Halving the recipe works fine and tastes great; the only difference is thinner brownies. If you want smaller portions or don’t have all the ingredients, the recipe halves beautifully.

Though I often use a stand mixer for baking, this recipe is intentionally simple and mixes easily by hand. Use a bowl, whisk, and spoon if you prefer—no mixer required.

I like a ceramic 9×9 square pan for slightly taller brownies, but glass or metal pans work well too. For thinner brownies to serve more people, use a 13×9-inch pan. An 8×8 or 9×9 pan produces deeper, fudgier squares.

Can I freeze these brownies?

I rarely have leftovers, but these should freeze well. Cool completely, cut into individual squares, wrap each piece in plastic wrap, and place in an airtight container or freezer-safe bag. Double-wrapping helps prevent freezer burn. They should keep for 2–3 months. Thaw at room temperature and enjoy.
