
Keto Swedish Meatballs

Ingredients
Meatballs
- 1 lb lean ground beef or preferred ground meat
- 1 large egg
- 2 TBS milk of choice
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp garlic powder
- 1/2 tsp ground black pepper
- 3/4 cup low-carb breadcrumbs or crushed pork rinds
Sauce
- 1 cup beef or bone broth
- 1 cup sour cream
- 1 TBS soy sauce
- 1/2 tsp ground black pepper
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme or rosemary
- 1/2 tsp xanthan gum (optional thickener)
Instructions
Meatballs

Preheat the oven to 400°F (200°C). Line a large baking sheet with foil and lightly spray with cooking spray.

Place the ground beef in a large bowl and break it into small pieces with a spoon or your hands.

Add the egg and mix until evenly coated, then add the milk and combine thoroughly.

Stir in onion powder, salt, garlic powder, and black pepper until the seasonings are evenly distributed.

Gradually fold in the low-carb breadcrumbs or crushed pork rinds a little at a time until blended. Knead lightly with your hands until the mixture is uniform.

Scoop 1–2 tablespoons of mixture for each meatball, roll into tight balls, and place on the prepared baking sheet.

Bake for 18–20 minutes or until meatballs are cooked through and no longer pink in the center.
Sauce

In a large skillet over medium heat, whisk together the broth, sour cream, and soy sauce until smooth.

Add black pepper, onion powder, garlic powder, and dried thyme (or rosemary). Whisk to combine.

Sprinkle in the xanthan gum a little at a time while whisking, until the sauce is smooth and beginning to thicken.

Bring the sauce to a gentle boil, then reduce heat to medium-low and simmer about 10 minutes until thickened. It will set further as it cools.

Add the cooked meatballs to the skillet and stir to coat them in the sauce. Bring to a low boil again, then simmer 4–5 minutes to meld the flavors.
