  • 2–3 cloves garlic, sliced
  • 2 cups water
  • 2 blocks Japanese curry blocks
  • 2 servings udon

  • Finely slice the onion and mince or thinly slice the garlic. Heat a little neutral oil in a frying pan over medium heat, add the garlic and onion, and cook until softened, about 2 minutes.
  • Add the thinly sliced beef and stir-fry until browned, roughly 2 minutes depending on thickness.
  • Pour in the water and bring to a gentle simmer. Add the Japanese curry roux blocks and stir until they dissolve and the sauce thickens to your preferred consistency.
  • While the curry simmers, cook the udon according to package instructions until al dente, then drain. Place noodles in serving bowls and ladle the beef curry over them.
  • Garnish with sliced scallions and pickled ginger if desired, and serve immediately.
