
This Cheesy Loaded Cauliflower Bread is a low-carb side that tastes fantastic and is an easy, satisfying way to enjoy more vegetables. I’ve been wanting to make this for months and plan to create more cauliflower-based dishes in the coming weeks. If you like cauliflower, you’ll appreciate this “bread” — if not, this isn’t the recipe for you.

It won’t have the exact texture of traditional bread, but it bakes into a flatbread-style base that lets you enjoy veggies in place of a bread crust.
This would be excellent as a pizza crust — I plan to try it soon. Ham pairs well with cauliflower, so a ham-and-cheese topping sounds like a great match.

My nephew made this and really enjoyed it. The mixture presses flat easily, then bakes into a sturdy base you can top however you like.

After prebaking, top with favorites such as bacon, sliced ham, extra cheese and chives. It makes a wonderful, lower-carb alternative to bread while still delivering all the classic toppings.

I’ll definitely make this again — it satisfies cheesy cravings in a healthier way. It’s not garlic bread, but it’s a great low-carb, gluten-free option if you watch other ingredients like bacon for gluten content.

Ingredients
- 2 1/2 cups Riced Cauliflower
- 2 eggs, beaten
- 1/4 cup cheddar cheese
- 1/2 tsp garlic powder
- 1/2 cup shredded cheddar cheese (for topping)
- 1–2 tsp chopped chives or green onion
- 2 slices bacon, precooked
- 1 tsp olive oil (to grease baking sheet)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix the riced cauliflower, beaten eggs, 1/4 cup cheddar and garlic powder until evenly combined.
- Line a baking sheet with parchment paper and lightly grease it with olive oil.
- Spread and flatten the cauliflower mixture into a rectangle about 1/4 inch thick, keeping the thickness even.
- Bake 25–30 minutes, until slightly dried and browned around the edges.
- Remove from the oven and sprinkle the shredded cheddar, chopped chives and precooked bacon on top.
- Return to the oven 3–5 minutes until the cheese is melted and bubbly.
- Remove, let cool briefly, then slice and serve.
