What You Need for Chocolate Peanut Butter Brown Rice Crispy Treats

  • Chocolate Brown Rice Crispies: Cocoa-flavored brown rice cereal gives these bars their chocolatey crunch. Cascadian Farms Cocoa Crispy Rice is a great option if you can find it.
  • Brown Rice Syrup: This golden syrup serves as the sweet binder instead of marshmallows. It contributes chewiness and uses a less processed sweetener than refined sugar.
  • All-Natural Peanut Butter: Choose an all-natural peanut butter for creamy, nutty flavor without added oils or sugar.

Add-In Ideas

  • Chocolate Chips: Stir in chocolate chips for extra melty pockets of chocolate.
  • Vanilla: A splash of vanilla extract brightens the flavors.
  • Nuts: Add chopped almonds, cashews, or your favorite nuts for extra crunch.
  • Mini Marshmallows: For a gooey contrast, fold in mini marshmallows.
  • Protein: Boost protein by adding 1/4 cup of chocolate protein powder to the peanut butter mixture.

Ingredient Swaps

  • Nut Butter Alternatives: Substitute almond butter, cashew butter, or sunflower seed butter if you prefer.
  • Brown Rice Cereal: Regular Cocoa Krispies can be used if you can’t find a brown rice version.
  • Brown Rice Syrup: Maple syrup or honey can replace brown rice syrup in a pinch; adjust quantities for texture and sweetness.

Tips for Making Brown Rice Crispy Treats

  • If you don’t have chocolate rice crispies, add 1–2 tablespoons of unsweetened cocoa powder to the peanut butter mixture and add a little more syrup as needed to achieve the right consistency.
  • If using honey, warm the honey and peanut butter together until they loosen and start to bubble lightly, then stir in the cereal.

Storage + Freezer Directions

Store the bars in an airtight container. For best results, freeze them so they stay firmer and hold together well. Partially frozen, they have a great texture. Freeze up to 3 months; thaw a few minutes before serving if you prefer them softer.
