I’m a big fan of leftover turkey sandwiches. There’s a local sub that stacks turkey, stuffing and cranberry sauce on a roll, but I’ve developed a lighter, simpler version that highlights great bread and bright flavors. The result is a Cranberry, Brie & Bacon Turkey Sandwich that’s easy to assemble and even better to eat.

The foundation of any standout sandwich is the bread. I usually prefer bakery loaves, but Sara Lee® Artesano™ Golden Wheat Bread impressed me enough to keep a loaf in the pantry. It’s soft and sliced thick, with olive oil, sea salt and a touch of honey in the recipe. There’s no high fructose corn syrup and no artificial colors or flavors, so it tastes fresh and clean — perfect for supporting the sandwich’s bold components.

Ingredients

  • 2 tablespoons mayonnaise
  • 3 tablespoons cranberry sauce
  • ½ teaspoon honey
  • 4 slices Sara Lee® Artesano™ Golden Wheat Bread
  • 2 small handfuls arugula
  • ½ pound sliced turkey leftovers or deli turkey
  • 6 ounces brie cheese (enough to cover each sandwich)
  • 4 strips bacon cooked crisp

Instructions

  • In a small bowl, stir together the mayonnaise, cranberry sauce and honey until combined. Small cranberry pieces are fine.
  • Spread one-quarter of the cranberry mayo over one side of each slice of bread and place the slices mayo side up on a cutting board.
  • On two slices, layer arugula, turkey, bacon and brie.
  • Top with the remaining bread, mayo side down, and serve immediately. Enjoy cold or warm.

Notes

To make a grilled version: heat a large skillet over medium. Assemble the sandwich, spread 1 tablespoon butter on the top slice, flip the sandwich and place it butter-side down in the hot skillet. Spread butter on the bread side now facing up. Grill 3–4 minutes per side until golden and the brie is melty. Serve immediately.

You can also use reserved bacon fat instead of butter for extra flavor.
