Leftover ingredients often inspire my best recipes. They free you from strict rules and invite creativity. That’s how these cauliflower and feta fritters came to be: a simple, flavorful way to transform odds and ends from the fridge and pantry into something satisfying.
My refrigerator is always a small treasure trove of extras—fresh herbs, bags of vegetables, garlic, chili—and the pantry usually holds a handful of different flours and other odds and ends. That variety is perfect for experimenting and reinventing ingredients before they go to waste.



The flavor of these fritters is bright and herby, similar to baked zucchini fritters I sometimes make. I used a mix of dill, mint and plenty of flat-leaf parsley for a fresh, aromatic profile. The feta adds a pleasant tang and saltiness that balances the vegetables.
This version is gluten free; I chose coconut flour to bind the mixture. Coconut flour is highly absorbent, so only a small amount is needed. The batter may require a little adjustment: I began with two eggs, then added a third to achieve the desired consistency. If you use a different flour or a fresh cheese like ricotta, adjust the wet and dry ingredients accordingly.
These fritters pair well with a simple leafy salad—kale or mixed greens—and a dollop of Greek-style yogurt or tzatziki. They make a lovely light dinner or a shared appetizer and are an excellent way to use up small quantities of herbs and cheese.
Feel free to adapt the herbs and seasonings to what you have on hand. A pinch of sumac adds a subtle citrusy note, but a squeeze of lemon would work just as well. If you prefer a crisper texture, cook them a little longer on each side or finish in a moderate oven for a few minutes.

CAULIFLOWER AND FETA FRITTERS RECIPE
Makes approximately 12 fritters
Ingredients
- ½ head cauliflower (about 400 grams), chopped into florets
- ½ cup chopped fresh flat-leaf parsley
- ¼ cup fresh mint, finely chopped
- 2 tablespoons fresh dill, finely chopped
- Pinch of sumac (optional) or a squeeze of lemon
- 100 grams feta cheese, crumbled
- 3 eggs, lightly beaten
- 1–2 tablespoons Greek yogurt (optional, for extra moisture)
- ¼ cup coconut flour (adjust as needed)
- Olive oil for frying
Instructions
- Steam the cauliflower florets for 5–6 minutes until just tender. Allow them to cool slightly, then place in a large bowl and roughly mash with a fork or potato masher so there are still some small pieces for texture.
- Add the chopped parsley, mint, dill, crumbled feta, sumac (if using), eggs and Greek yogurt. Stir to combine. Sprinkle in the coconut flour and mix until the mixture resembles a thick batter. Adjust by adding a little more flour if too wet or an extra spoonful of yogurt or an extra egg if too dry.
- Heat a frying pan over medium–high heat and add enough olive oil to coat the base. Use a heaped tablespoon of the mixture for each fritter, or use an egg ring for a uniform shape. Carefully place spoonfuls in the hot pan, leaving space between them.
- Cook for 2–3 minutes on the first side until golden brown, then flip and cook for another 2–3 minutes until cooked through and nicely browned. Reduce the heat slightly if the fritters brown too quickly before the center sets.
- Transfer cooked fritters to a plate lined with paper towel to drain briefly. Serve warm with a crisp salad and a spoonful of Greek yogurt or a simple yogurt sauce on the side.
