Ingredients 

  • 3 fresh mozzarella, balls
  • 500 grams cherry tomatoes
  • 1 olive, black
  • 6 peppercorn
  • fresh basil leaves
  • 5 tablespoons olive oil
  • 4 tablespoons balsamic glaze
  • sea salt, to taste
  • pepper, to taste

Instructions 

  • Halve the fresh mozzarella and trim the edges if needed so each half is round and even.
  • Arrange the mozzarella halves, rounded side up, in a circle on a large platter to form the wreath base.
  • Scatter the cherry tomatoes around and between the cheese pieces. Halve some tomatoes if needed to fill gaps and create a balanced look.
  • Quarter a black olive and remove any excess flesh from the inside of each quarter.
  • Use a small, sharp knife to cut the olive skin into tiny V shapes for eyes and curved pieces for smiles.
  • Place the olive pieces on the mozzarella to create faces. For a quicker option, use whole peppercorns for eyes or both eyes and mouth.
  • Tuck fresh basil leaves into the remaining gaps around the wreath for color and fragrance.
  • Finish with a drizzle of olive oil and balsamic glaze, then season lightly with sea salt and freshly ground pepper to taste.
  • Serve immediately as a festive starter or side.
