Ingredients

Meatballs

  • 1 lb lean ground beef or preferred ground meat
  • 1 large egg
  • 2 TBS milk of choice
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp ground black pepper
  • 3/4 cup low-carb breadcrumbs or crushed pork rinds

Sauce

  • 1 cup beef or bone broth
  • 1 cup sour cream
  • 1 TBS soy sauce
  • 1/2 tsp ground black pepper
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme or rosemary
  • 1/2 tsp xanthan gum (optional thickener)

Instructions

Meatballs

  • Preheat the oven to 400°F (200°C). Line a large baking sheet with foil and lightly spray with cooking spray.
  • Place the ground beef in a large bowl and break it into small pieces with a spoon or your hands.
  • Add the egg and mix until evenly coated, then add the milk and combine thoroughly.
  • Stir in onion powder, salt, garlic powder, and black pepper until the seasonings are evenly distributed.
  • Gradually fold in the low-carb breadcrumbs or crushed pork rinds a little at a time until blended. Knead lightly with your hands until the mixture is uniform.
  • Scoop 1–2 tablespoons of mixture for each meatball, roll into tight balls, and place on the prepared baking sheet.
  • Bake for 18–20 minutes or until meatballs are cooked through and no longer pink in the center.

Sauce

  • In a large skillet over medium heat, whisk together the broth, sour cream, and soy sauce until smooth.
  • Add black pepper, onion powder, garlic powder, and dried thyme (or rosemary). Whisk to combine.
  • Sprinkle in the xanthan gum a little at a time while whisking, until the sauce is smooth and beginning to thicken.
  • Bring the sauce to a gentle boil, then reduce heat to medium-low and simmer about 10 minutes until thickened. It will set further as it cools.
  • Add the cooked meatballs to the skillet and stir to coat them in the sauce. Bring to a low boil again, then simmer 4–5 minutes to meld the flavors.
