Patriotic Pudding Cookies

School’s out and the days feel like summer, which means it’s time to plan for the 4th of July. If you want an easy, patriotic dessert that looks festive and tastes like a bakery cookie, these Patriotic Pudding Cookies are a perfect choice. They’re soft, tender, and simple to make — the instant pudding mix keeps the crumb moist and light. Best of all, they’re practically foolproof.

How to make Patriotic Pudding Cookies:

Start by creaming the butter and brown sugar in a stand mixer or a large bowl with a hand mixer until smooth and slightly fluffy. Add the egg and vanilla, then mix until the mixture is combined and glossy.

Stir in the dry instant vanilla pudding powder, salt, baking soda, and all-purpose flour until a soft cookie dough forms. Fold in 3/4 cup of the red, white, and blue M&M’s evenly into the dough. Cover and chill the dough in the refrigerator for 1 to 2 hours — this step is important to get the best texture and flavor.

When the dough is chilled, preheat the oven to 350°F (177°C). Line a baking sheet with parchment paper or spray lightly with nonstick spray. Scoop and roll the dough into balls, spacing them evenly on the sheet. Press the remaining M&M’s gently onto the top of each cookie so the colors remain visible after baking.

Bake for 9–11 minutes, depending on your oven and how soft you like the center. Allow the cookies to rest on the baking sheet for about 5 minutes after coming out of the oven, then transfer to a wire rack to cool completely. These cookies stay soft and chewy thanks to the pudding powder and chilled dough.

Do I need to prepare the pudding?

No. Do not prepare the instant pudding with milk or water. Use only the dry pudding powder as an ingredient in the cookie dough. The dry mix is what creates the soft texture inside the cookie.

Can I skip the chilling?

Chilling is highly recommended. Refrigerating for at least one hour (up to two) firms the dough so the cookies bake up with the right shape and texture. Skipping this step often results in flatter, denser cookies. Trust the chill — it’s worth the wait.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 large egg

  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 1/4 cups all-purpose flour
  • 1 cup red, white, and blue M&M’s (divided)

Instructions

  1. Cream together butter and brown sugar until smooth. Add egg and vanilla; mix until combined.
  2. Add the dry instant vanilla pudding powder, salt, baking soda, and flour. Mix until a soft dough forms. Fold in 3/4 cup of the M&M’s.
  3. Cover the dough and chill in the refrigerator for 1 to 2 hours.
  4. Preheat oven to 350°F. Line baking sheets with parchment paper or spray lightly with nonstick spray.
  5. Roll chilled dough into 1–1.5 inch balls and place on the prepared baking sheet. Press the remaining M&M’s on top of each dough ball to display the colors.
  6. Bake 9–11 minutes, until edges are set but centers remain soft. Let cookies cool 5 minutes on the sheet, then transfer to a rack to finish cooling.

Notes and tips

  • Use room-temperature butter for easier creaming and a consistent dough.
  • Divide the M&M’s so you can press a few on top of each cookie before baking for the best visual effect.
  • If you prefer a firmer cookie, chill the dough longer. For a chewier result, bake at the lower end of the time range and cool on the baking sheet briefly.
  • Store cookies in an airtight container at room temperature for up to 4 days; they remain soft and tender.
