How to Make this Melon Popsicle Recipe

  • Purée melon with sugar, salt and lime.
  • Taste and adjust sugar, salt and lime as needed.
  • Toss melon chunks with chile flakes, sugar and salt.
  • Divide the chile-spiced chunks evenly among popsicle molds.
  • Pour the puréed melon juice into the molds, leaving room for expansion.
  • Freeze until fully solid.

Simple ratio: for every 1 cup of melon purée, use 1 tablespoon sugar, 1 tablespoon lime juice and a pinch of salt (adjust to taste).

Watermelon Popsicles with Chile & Lime

Sweet, juicy melon popsicles spiked with chile and lime. Melon, sugar, lime, salt, chile—that’s it. Bright, simple and perfect for summer.

Ingredients

  • 4 cups melon chunks seedless or seeds removed, divided
  • 4 tablespoons sugar divided + more to taste
  • 2 tablespoons lime juice + more to taste
  • 1/2 teaspoon kosher salt divided
  • 1 tablespoon maras chile flakes

Instructions

  • In a blender, purée 1 cup of melon with the lime juice, 3 tablespoons sugar and a pinch of kosher salt until very smooth. Add a splash of water if needed to help it liquefy.
  • Strain the purée through a fine mesh sieve into a bowl, pressing out the solids. Taste and add more lime or sugar if desired. (Purée will taste slightly less sweet once frozen.)
  • Meanwhile, toss the remaining 3 cups of melon chunks with the remaining tablespoon of sugar, a pinch of salt and the chile flakes.
  • Divide the chile-spiced melon chunks evenly between popsicle molds and top with the strained melon juice. Leave about 1/2–3/4 inch of space for expansion. Add the mold lids and sticks, then freeze until solid, 4–8 hours or preferably overnight.
