🧾 Ingredients

  • Fresh lemon juice
  • Simple syrup
  • Cold water
  • Watermelon, blended
  • Rosemary
  • Ice cubes

See the recipe card below for exact measurements.

🍬 Make the simple syrup

Combine 1 cup water and 1 cup granulated sugar in a small pot. Heat gently, stirring, until the sugar fully dissolves. Cool, store in a sealed container in the fridge, and use within two to three weeks.

🍉 Blend the drink

Place about ¾ cup chopped watermelon in a blender and blend until smooth. If needed, press the fruit down so it reaches the blades. Remove any large bits.

Pick a fresh rosemary sprig, strip a few needles, and lightly crush them between your fingers to release the aroma—about ¼ teaspoon of chopped rosemary works well.

In a glass, combine ¼ cup fresh lemon juice, 1 tablespoon simple syrup, ½ cup cold water, ¾ cup blended watermelon, and the chopped rosemary. Stir, add ice, and garnish with a small lemon and watermelon slice. Enjoy!

🍾 Variations

  • Bubbly — Swap the cold water for sparkling water for a fizzy version.
  • Cocktail — Add 1 ounce vodka for a light summer cocktail.
