- ¼ teaspoon salt
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (14 ounce) can fire-roasted diced tomatoes, drained well
- ½ cup fresh cilantro, chopped
- ½ cup crumbled feta* (optional)
For the dressing:
- 2 tablespoons olive oil
- 1 teaspoon red wine vinegar
- 1 ½ teaspoons honey** (or maple syrup for vegan)
- 1 to 2 chipotle peppers in adobo sauce, minced
- ¼ teaspoon salt
Instructions
To make the salad:
- Add the water to a medium saucepan and bring to a boil. Stir in the couscous, cover, reduce the heat and simmer about 10 minutes until most of the water is absorbed and the couscous is cooked but still slightly al dente.

To make the dressing:
- Whisk together the olive oil, red wine vinegar, honey (or maple), minced chipotle and salt until smooth. Pour the dressing over the salad and toss until everything is evenly coated. Taste and adjust salt or pepper as needed.
