Learn a simple, step-by-step method for painting purple buffalo check plaid on a wooden Easter bunny using painter’s tape. This easy DIY creates a charming plaid Easter decoration perfect for a front door, mantel, or seasonal vignette.

Preparing a plaid-painted bunny is a fun, beginner-friendly craft. With a few supplies and basic painting techniques you can achieve crisp buffalo check lines and a professional-looking finish. Below is a clear walkthrough—from mixing colors through adding the finishing cotton tail—that will guide you through each stage.

HOW TO PAINT Purple BUFFALO CHECK PLAID

If you’ve painted buffalo check before, this will feel familiar. For best results use a quality painter’s tape, like Frog Tape, and lightweight coats of acrylic paint to prevent bleeding. The process uses successive taping and painting of horizontal and vertical stripes to build the classic buffalo check pattern.

This post originally contained affiliate links.

HERE’S WHAT YOU’LL NEED TO MAKE A DIY PLAID Easter bunny

Wooden Easter bunny cutout (available at craft stores)

Painter’s tape (high-quality for crisp lines)

White chalk paint for the base

Three shades of purple acrylic paint: light, medium, and dark

Paint brushes (small detail and medium flat brush)

White pom pom or cotton ball for the tail

Hot glue gun

Using chalk paint for the base helps the subsequent tape application hold and reduces peeling. Choose three harmonious purple tones for the layered buffalo check effect, or mix shades from a single set of acrylics to create the desired gradient.

MIX PAINT COLORS

You’ll want a light purple, a medium purple, and a deeper purple to create the traditional buffalo check depth. If you don’t have pre-mixed shades, blend small amounts of white and darker purple until you achieve a pleasing progression from light to dark. Keep test swatches on a scrap board so you can compare the values side by side before painting the bunny.

BASE COLOR

Begin by painting the entire bunny with white chalk paint as your base. Let the base coat dry completely before applying tape. Chalk paint provides a matte, slightly textured surface that adheres well and minimizes lifting when tape is removed.

TAPE OFF HORIZONTAL STRIPES

Working from the bottom upward, apply horizontal strips of painter’s tape across the bunny. Press each strip firmly to create a good seal. Use a piece of tape as a spacer between stripes for even spacing—this is quicker than measuring and yields consistent results.

PAINT HORIZONTAL STRIPES

Apply the lightest purple within the taped-off horizontal bands. Use thin coats and avoid overloading the brush to reduce bleed under the tape. Allow the paint to dry slightly but remove the tape while paint is still a bit tacky for the cleanest edges.

REMOVE TAPE

Carefully peel the tape back at an angle while the paint is still slightly wet or tacky. This helps maintain crisp, straight lines.

TAPE OFF VERTICAL STRIPES

Once horizontal stripes have dried enough, tape vertical stripes across the bunny. Start at one edge and space the tape evenly. Make sure tape edges line up straight to form the checkerboard grid when painted.

PAINT VERTICAL STRIPES

Paint the vertical bands with the medium purple shade. Keep the brush strokes even and avoid heavy application. Leave the tape in place until the paint has dried fully to avoid smudging or uneven edges.

TAPE HORIZONTAL STRIPES.

If necessary, reapply thin horizontal tape to mask off areas before adding the deeper purple for the small intersecting checks. Accurate taping prevents color bleeding and ensures the characteristic buffalo check squares are distinct.

PAINT THE CHECK

With a small brush and the darkest purple, paint the inner squares and overlapping areas to deepen the pattern. Apply two thin coats if needed for full coverage. Let paint dry completely before removing all tape.

When you peel away the remaining tape you’ll reveal crisp buffalo check squares. If any minor bleeding occurred, wait until the piece is fully dry and touch up small areas with a fine detail brush and matching color.

Add a cotton tail

Finish by hot-gluing a white pom pom or a small ball of cotton to the back of the bunny for a fluffy tail. This simple touch adds dimension and a playful, finished look to your plaid Easter decoration.

Display your finished buffalo check bunny on a wreath, lean it on a front porch leaner, or place it among spring florals. This technique scales easily to other shapes and seasonal decor, so once you’ve mastered it you can create matching pumpkins, signs, or hearts with the same plaid style.

Crisp at the edges and chewy in the center, these chocolate chip butterscotch cookies are simple perfection. They require no chilling and can be ready in under an hour. Semi-sweet chocolate and butterscotch chips pair with a sprinkle of flaky sea salt for an irresistible sweet-and-salty balance.

What is butterscotch?

Butterscotch is closely related to caramel. Both start with melted sugar, butter, and cream, but butterscotch is typically made with brown sugar, which gives it a deeper, molasses-like flavor. Because brown sugar blends smoothly with butter, butterscotch can be a little more forgiving to make than classic caramel. In many stores, you can find butterscotch chips displayed near the chocolate chips in the baking aisle.

Tips for the best cookies

Measure flour correctly. Flour is easy to overpack if you scoop straight from the bag, which leads to dry cookies. Use the spoon-and-level method: spoon flour into the measuring cup, then level it off with a knife. A kitchen scale is even more accurate and gives consistent results.

Choose semi-sweet chocolate chips. Butterscotch chips are quite sweet on their own, so semi-sweet chocolate provides contrast and prevents the cookie from becoming overly sugary. If you prefer a creamier option, milk chocolate can work, but the semi-sweet choice balances the sweetness best here.

Don’t overbake. Remove cookies when the edges are golden and the centers still look slightly underdone. They will finish setting on the warm baking sheet, yielding a soft, chewy middle.

Finish with flaky sea salt. A light sprinkle of flaky sea salt right after baking sharpens the flavors and elevates the sweet-and-salty contrast.

How to get perfectly round cookies

To create a neat, round cookie and prevent excess spreading, try this simple trick: right after the cookies come out of the oven, press a round cookie cutter (slightly larger than the cookie) around each cookie and gently push any protruding edges inward to form a circle. This also compresses the sides slightly, producing a thicker cookie. If you don’t have a cutter, the curved edge of a fork or the back of a spoon works in a pinch.

Picture-perfect cookies

For cookies that look as good as they taste, top them with extra chips before or immediately after baking. Press a few chocolate and butterscotch chips into the tops of the dough balls before baking so the chips remain visible on the surface. Alternatively, add a few extra chips to the hot cookies after they come out of the oven so they melt slightly and appear gooey. Finish with a dusting of flaky sea salt while the cookies are still warm.

How to freeze cookie dough

If you like having fresh-baked cookies on demand, freeze the dough before baking. Scoop dough into balls and freeze them on a sheet or plate until firm, about an hour. Transfer the frozen dough balls to a zip-top bag and store in the freezer for up to a couple of months. When you’re ready to bake, place the frozen dough balls on a baking sheet and let them thaw at room temperature for about an hour, or bake from frozen—just add a few extra minutes to the baking time.

How to store the cookies

Store baked cookies in an airtight container at room temperature for 3–5 days. To help keep them soft, tuck a slice of bread into the container—the cookies will absorb moisture and stay tender longer.

Chocolate Chip Butterscotch Cookies

Crisp on the edges and chewy in the middle, these cookies combine semi-sweet chocolate, butterscotch chips, and a finishing sprinkle of flaky sea salt for the best sweet-and-salty bite. Makes about 24 cookies.

Ingredients

1 cup butter, cool room temperature

½ cup granulated sugar

1 ½ cups brown sugar, packed

3 cups (360 grams) all-purpose flour

1 teaspoon baking soda

1 teaspoon kosher salt

2 teaspoons vanilla extract

2 large eggs

1 ½ cups semi-sweet chocolate chips

1 cup butterscotch chips

Flaky sea salt, for topping

Instructions

Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Using a hand mixer or stand mixer, cream together the butter, brown sugar, and granulated sugar for 2–3 minutes until light and fluffy. Add the eggs and vanilla and mix until combined.

In a separate bowl, whisk together the flour, baking soda, and kosher salt. Add the dry ingredients to the butter mixture and mix on low until most of the flour is incorporated. Avoid overmixing. Fold in the chocolate and butterscotch chips on low speed or by hand.

Using a cookie scoop or small ice cream scoop, portion about 3 tablespoons of dough per cookie and place mounds about 2 inches apart on the prepared baking sheet.

Bake for 12–15 minutes, until edges are golden and centers are just beginning to set. It’s better to err on the side of underbaking for a soft center. Immediately sprinkle each hot cookie with flaky sea salt and transfer to a cooling rack to finish setting.

Notes

Store baked cookies in an airtight container for 3–5 days. Adding a slice of bread to the container helps keep them soft.

For the most attractive cookies, press a few extra chocolate and butterscotch chips into the tops of the dough balls right before baking so chips remain visible on the surface.

This hearts of palm salad features tender spears of hearts of palm set on a bed of buttery Bibb lettuce, accented with sliced radishes, crushed pistachios and crumbled goat cheese. A simple Dijon vinaigrette ties the flavors together for a fresh, bright salad that’s easy to assemble and beautiful to serve.

A truly great salad balances texture, flavor and color. This hearts of palm salad delivers on all three: the mild, slightly nutty hearts of palm, the crisp heat of radish slices, the crunch of pistachios and the creamy tang of goat cheese create a satisfying contrast. The Dijon vinaigrette adds a bright acidity that lifts the whole dish.

The natural, slightly nutty flavor of hearts of palm complements the tangy Dijon vinaigrette

Crushed pistachios add a pleasing crunch to the soft butter lettuce

Sliced radishes provide a mild peppery bite that brightens the salad

A quick homemade Dijon vinaigrette brings balanced acidity and depth

Ingredients

This salad is very flexible. Swap ingredients to suit what you have on hand or your personal preferences—here are the core items and optional alternatives to guide you.

Butter lettuce (also called Bibb or Boston) – choose a fresh head with tender, unblemished leaves.

Hearts of palm – available canned or jarred; drain and slice. Either type works well for this salad.

Pistachios – shelled and lightly crushed for texture. Other nuts such as walnuts or hazelnuts also work; seeds like roasted sunflower seeds are a good substitute.

Crumbled goat cheese – provides a tangy creaminess. Feta is a fine alternative if you prefer.

Radishes – thinly sliced for a touch of heat and color. If you don’t enjoy radishes, swap in halved grape tomatoes or diced red bell pepper.

Dijon vinaigrette – a simple dressing of whole grain Dijon mustard, extra virgin olive oil, white balsamic vinegar, a touch of sugar, minced garlic and shallot, and a little dried oregano and black pepper.

Tips for making hearts of palm salad

This salad is quick to prepare, but attention to ingredient quality and a few small techniques will make it shine.

Choose fresh butter lettuce, remove the core and rinse leaves gently; dry thoroughly so the dressing clings without making the greens soggy.

Drain hearts of palm well and pat them dry before slicing to avoid excess liquid in the bowl; cutting them into thirds or bite-sized pieces works best for presentation and eating.

Use a good-quality extra virgin olive oil in the dressing for better flavor and mouthfeel; taste and adjust the seasoning of the vinaigrette before tossing with the salad.

It’s March, which for many of us means the return of brighter days and celebrations for St. Patrick’s Day. For me, March brings memories of Irish step dancing, parades, festivals, and small community gatherings. Those events almost always featured a table of simple, satisfying foods — and I always headed straight for the Irish soda bread.

Warm and slathered with butter, a slice of classic soda bread is hard to beat. It’s straightforward to make and relies on a few pantry staples. Below I’ll walk through ingredients, technique, and tips so you can bake a tender loaf with a crisp crust and a soft, slightly tangy crumb.

Ingredients

Soda bread is a quick bread that uses chemical leavening rather than yeast, so the ingredient list is short. Many traditional Irish loaves are plain, but in this version I include raisins for a touch of sweetness and moisture. Dried currants are an excellent alternative.

All-purpose flour

Sugar

Baking soda

Salt

Cold unsalted butter

Buttermilk (or milk plus vinegar)

Egg

Raisins or currants

Caraway or No Caraway?

Some traditional recipes include caraway seeds, which bring an earthy, slightly rye-like note. If you enjoy that flavor, add a tablespoon or two to the dry ingredients. If you’re unsure or cooking for a crowd, leave them out — the loaf is delicious either way.

How baking soda leavens the bread

Soda bread is classified as a quick bread because it uses baking soda for leavening rather than yeast. Baking soda needs an acid to react and create gas bubbles that lift the dough. In this recipe, buttermilk provides the acidity. If you don’t have buttermilk, you can make a quick substitute by mixing regular milk with two tablespoons of white vinegar or lemon juice and letting it sit for a few minutes until it thickens slightly.

Cutting butter into the flour

One important technique is cutting cold butter into the dry ingredients until the mixture looks like coarse crumbs or wet sand. This creates small pockets of fat that, when they melt in the oven, leave little air pockets that keep the loaf tender and flaky — similar to making scones or biscuits. Use a pastry blender, a food processor with a few pulses, or two knives to accomplish this.

Baking tips

Shape the dough into a round loaf and score a deep “X” across the top before baking. That traditional cross allows the heat to penetrate the center and also helps the loaf bake evenly. Bake until the crust is golden and the loaf sounds hollow when tapped on the bottom. If you have an instant‑read thermometer, the internal temperature should be about 200–205°F (93–96°C) for a fully baked loaf.

Serving and storage

Serve soda bread warm with butter, jam, or sharp cheddar. It’s best eaten the day it’s made, but it keeps well at room temperature for a couple of days when stored in an airtight container. For longer storage, slice and freeze; toast slices straight from the freezer for a fast, satisfying snack.

More ideas for St. Patrick’s Day

Soda bread pairs beautifully with hearty soups and stews, mashed potatoes, or braised meats. For a themed meal, consider serving it alongside lamb and barley stew, colcannon, or classic corned beef and cabbage.

Classic Irish Soda Bread with Raisins

This classic loaf uses baking soda and tangy buttermilk for lift. Cooking it on a pan or in a Dutch oven produces a nicely rounded shape. The raisins add a touch of sweetness and help keep the crumb moist.

Instructions

Preheat the oven to 375°F (190°C). Line a Dutch oven or baking pan with parchment paper or lightly grease it.

In a large bowl combine 4 cups of flour with the sugar, baking soda, and salt.

Toss the raisins with about 2 teaspoons of the flour mixture to coat them, which helps prevent them from sinking to the bottom. Set aside.

Cut the cold butter into the remaining flour mixture using a pastry blender, food processor (a few pulses), or two knives, until the mixture resembles coarse sand.

In a small bowl whisk together the buttermilk and egg. Pour into the dry ingredients and stir gently until just combined. Fold in the raisins.

Turn the dough onto a well-floured surface, knead gently just a few times until it comes together. Shape into a ball and place on the prepared pan. Use a sharp knife to cut a deep X across the top.

Bake for 45–60 minutes, until the crust is golden brown and the loaf sounds hollow when tapped. Check doneness with an instant‑read thermometer if desired.

Cool slightly, then serve warm. Store leftovers in an airtight container at room temperature for up to two days, or freeze slices for longer storage.

Grain-free, naturally sweetened, dairy-free paleo blueberry muffins made easily in a blender. Whip these up quickly to share with your mom for Mother’s Day or any morning gathering.

Hey Mom,

Happy Mother’s Day!

I wasn’t sure what to write this year besides telling you how amazing you are. After three years of Mother’s Day posts I worried I’d run out of words, but then I remembered the lessons you’ve always taught me. You taught me to find the bright side and to say what needs to be said — so here are a few things I’ve learned from you, in no particular order.

Always look on the bright side. You’ve modeled optimism through difficult times. Rather than letting hardship define you, you choose growth. That light you carry around is unmistakable and inspiring.

Be curious. Keep learning, keep exploring, keep moving forward. Your curiosity is contagious and has shaped the way I approach life.

Stand still. You often remind me to pause before acting — to breathe, sleep on a decision, and return with clarity. That patience has saved me from many impulsive mistakes.

Do the right thing. You consistently choose integrity. When given a chance to gain at someone else’s expense, you taught me to take the high road. That lesson has become a moral compass for me.

When you eat too much sugar, eat a carrot. This one is charmingly silly — eating a carrot won’t erase a whole cake — but the underlying idea is balance and humor, which I appreciate.

See the intentions behind others’ actions. Instead of judging behavior at face value, you taught me to consider intent. That perspective helps me stay compassionate and avoid needless conflict.

Ask for help — but only when necessary. You taught me to be self-reliant, but also to recognize when humility and support are the right choice. That balance is vital.

Be yourself. Our home was a place where authenticity was expected and celebrated. You showed me how to live with integrity and without pretense, and that lesson shaped who I am.

There is beauty in imperfection. You never demanded perfection, so I learned to accept flaws in myself and others. Those imperfections make life real and meaningful.

Indulge. You taught me it’s okay — and often necessary — to indulge: reading a great book, taking a spontaneous trip, binge-watching a show, or savoring a slice of cake. Life is richer when you make room for joy.

That list barely scratches the surface of what you’ve taught me. For now, brunch is calling, and I suspect you’re ready too — so I’ll keep this brief and give you something to eat.

I made you muffins. They are grain-free, naturally sweetened with honey, and dairy-free. They’re simple to prepare in a blender and turn out tender and full of berries. I hope you love them.

Thank you for all the lessons, for your kindness, and for seeing beauty everywhere. I love you.

See you soon,

Julia

Muffin tin

Ingredients

4 eggs

1/3 cup honey

2 teaspoons pure vanilla extract

1/3 cup coconut oil, softened

1 cup full-fat canned coconut milk

1/2 cup coconut flour

1 cup tapioca flour

1/2 tsp salt

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1 cup fresh blueberries

1/3 cup unsweetened shredded coconut (optional)

Instructions

Preheat the oven to 375°F (190°C) and line a 12-hole muffin tray with paper liners.

Place all ingredients except the blueberries into a blender and blend until combined and smooth.

Gently fold the blueberries into the batter. Fill each muffin cup most of the way full.

Bake on the center rack for 25–35 minutes. If desired, sprinkle the muffins with unsweetened shredded coconut halfway through baking. Muffins are done when an internal temperature reaches about 190–200°F (use a thermometer if you have one) or when a toothpick inserted near the center comes out clean.

Allow the muffins to cool at least one hour before removing the liners. Cooling prevents the muffins from sticking to the paper.

A Fresh, Colorful Starter for Hot Weather

When temperatures rise, a light, refreshing starter beats anything heavy. This salmon and mango tartare meets all the requirements: no cooking, fresh ingredients diced into even pieces, and a short chill in the fridge that brings everything together. The salmon provides a silky richness, the mango brings fragrant sweetness, and lemon lifts the whole dish with bright acidity. Stylish yet simple, it’s an ideal summer recipe that looks like restaurant fare while remaining easy to prepare.

Prepared in advance and assembled in minutes, this tartare is perfect for casual gatherings, outdoor meals, or relaxed evenings when you don’t want to spend time in the kitchen. The technique is straightforward—slice, mix, chill—and a decorative ring or mold gives a polished presentation with almost no effort. Below you’ll find ingredient details, step-by-step instructions, safety tips for handling raw fish, and a few serving and variation ideas to adapt the recipe to your taste.

Ingredients for 4 servings

Gather the following ingredients to serve four people:

400 g fresh salmon fillet, skin removed

1 ripe mango

1 lemon (green or yellow)

1 tablespoon olive oil infused with parsley or plain olive oil

A few chives, finely sliced

A few sprigs of fresh parsley for garnish

Salt and freshly ground black pepper

Preparation, step by step

Peel the mango and dice the flesh into small, even cubes to ensure balanced bites.

Cut the salmon into dice the same size as the mango so the textures and flavors combine uniformly.

Rinse and finely chop the chives; coarsely chop the parsley. Squeeze the lemon and combine juice, chives, parsley, salmon, and mango in a mixing bowl.

Add the olive oil, season with salt and pepper, then gently fold the mixture so the fruit and fish remain intact. Cover the bowl with cling film so it touches the surface of the mixture to reduce oxidation.

Chill in the refrigerator for about 4 hours. This resting period allows the lemon and herbs to perfume the salmon and mango without cooking the fish.

At serving time, place a metal or plastic ring mold on each plate and spoon the tartare into it, pressing down lightly to compact. Remove the mold carefully and finish with a few parsley sprigs for color.

Serve chilled and keep raw salmon safe

When serving raw fish, freshness and handling are essential. Buy salmon from a reputable fishmonger and keep it refrigerated until you’re ready to prepare it. For raw consumption, it’s recommended to freeze the fish solid in the center for 24 hours before use to reduce the risk of parasites; then thaw it slowly in the refrigerator before dicing. This precaution is standard food safety advice for raw seafood.

Do not leave the tartare at room temperature for long, especially in hot weather. Bring it out just before serving and consider chilling plates or serving bowls beforehand so the dish stays cool. Serve immediately once plated and avoid placing the tartare in direct sunlight or near heat sources like a barbecue. These small steps keep the flavor fresh and reduce food-safety risks.

Variations and serving suggestions

This tartare is versatile—here are a few ideas to personalize it without complicating preparation:

Add diced avocado for creaminess and color contrast; toss the avocado with a little lemon juice to prevent browning.

Brighten the flavor with a touch of lime instead of lemon, or add a few drops of sesame oil for a nutty note.

Incorporate finely grated ginger or a pinch of mild chili for a subtle warming kick that complements the sweet mango.

Serve the tartare with thin toast points, crispend lettuce leaves, or simple blinis for a more formal appetizer.

Final tips for best results

Keep the dice sizes consistent for an attractive presentation and balanced texture. Taste and adjust seasoning just before plating—acid and salt are the key to balancing the salmon’s richness and the mango’s sweetness. If you plan to serve later in the day, store the tartare covered and chilled, and plate only at the last minute to keep it looking and tasting its best. With minimal effort, this bright, elegant tartare makes a memorable starter on hot days.

The idea for this tray-bake came from live cookalongs I began hosting for families in 2020, and it quickly became a favorite for viewers and home cooks alike. It’s an ideal convenience dish: you layer the dry spaghetti and the other ingredients in a roasting pan (yes, the dried pasta goes straight in), bake, and in about 30 minutes you have a complete, satisfying meal. —Theo A. Michaels

One-Pan Spaghetti Puttanesca FAQs

Is this spaghetti puttanesca healthy?

This recipe offers nutritious components: tomatoes and garlic provide antioxidants, while the canned sardines contribute protein and omega-3 fatty acids, which help balance the carbohydrates from the pasta. Using sardines instead of anchovies increases intake of oily fish for those who don’t eat seafood regularly.

I can’t stand sardines or anchovies. What can I substitute?

If you dislike sardines or anchovies, try canned tuna packed in oil as a milder alternative. When added to the finished dish, tinned tuna will provide protein and a pleasant umami note without an overpowering fishy flavor.

Ingredients

11 1/2 ounces dried spaghetti

1 medium (8 oz) yellow onion, diced

3 garlic cloves, sliced

One (3 1/4-oz) can pitted black olives, drained and halved

2 tablespoons capers, coarsely chopped

2 tablespoons raisins

A pinch of red pepper flakes (optional)

4 tablespoons olive oil

One (14-oz) can cherry tomatoes (or fresh cherry tomatoes)

2 tablespoons tomato paste

2 3/4 cups warm chicken stock

One (5 1/2-oz) can sardines in oil, drained (reserve the oil)

Salt and freshly ground black pepper

A few sprigs fresh flat-leaf parsley, chopped

Instructions

Preheat the oven to 425°F (220°C).

Place the dried spaghetti in a roasting pan or 9- by 13-inch baking dish. Scatter the diced onion, sliced garlic, olives, chopped capers, raisins, and red pepper flakes (if using) over the pasta. Pour the olive oil over everything and use your hands to massage it through the spaghetti so the strands are lightly coated.

Add the canned cherry tomatoes with their juices, the tomato paste, warm chicken stock, and the drained sardines. Season with salt and freshly ground black pepper. Use a fork to gently combine the ingredients, breaking the sardines into chunky pieces but not fully mashing them. Drizzle the reserved sardine oil over the top. The liquid should cover the spaghetti by about 1/2 inch (12 mm).

Bake in the preheated oven for 30 minutes. Remove the pan and let the dish rest for 5 minutes so the pasta finishes cooking and absorbs the remaining liquid.

After resting, use a fork to loosen the strands of pasta and toss everything together. Garnish with chopped fresh parsley. If the mixture seems too thick, stir in a splash of hot water; if it’s too loose, return it to the oven for an additional 5 minutes.

Marge Rintoul

Easy, quick, inexpensive, healthy, and colorful. I worried the sardines might dominate, but they melt into the sauce and the dish remained well balanced. To reduce saltiness, I rinsed the capers and soaked the raisins briefly to plump them.

I used a food processor to pulse the tomatoes, onions, garlic, and capers, then added olives and plumped raisins at the end—simple and efficient prep.

Johnisha L.

This recipe is a brilliant time-saver. I used fresh cherry tomatoes when canned weren’t available and added a touch more tomato paste. The pasta, onions, and other elements were all cooked perfectly, and the leftovers stayed moist thanks to the oil in the dish.

Chiyo Ueyama

I expected an uneven bake, but the pasta came out uniformly al dente. The sauce had a pleasant balance of savory and sweet from the raisins, with heat from the red pepper flakes. This method gives a reliable pasta-to-liquid ratio to experiment with future variations.

Marcia L.

Uses pantry staples, comes together quickly, and produces consistent texture and flavor. I warmed the sardines briefly so they didn’t taste overly fishy, and the result paired beautifully with bread and a simple salad.

What’s in this Italian-Inspired Grown-Up Lunchable Box?

This lunch box is designed for variety: color, texture, and complementary flavors so each bite stays interesting. The ingredients I used were inspired by classic Italian combinations and include:

Tomato, mozzarella, and basil skewers

Cracked pepper turkey roll-ups wrapped in prosciutto di Parma

Roasted red pepper hummus

A sesame breadstick

Roasted red peppers and olives finished with a splash of balsamic vinegar

Sweet dates for a natural dessert

Use these components as a guide and feel free to swap in similar items to suit your taste or dietary needs.

How to prepare these grown-up Lunchable boxes

The recipe below is for one box but multiplies easily for meal prep. I often make four servings at once because the extra time to portion multiple boxes is minimal and it saves time later in the week. Keep wet components like the roasted peppers and olives in small sealed containers to prevent sogginess; I use small glass jars or portion containers. Place the hummus in a cupcake liner to keep it separate from other ingredients. Store breadsticks separately so they stay crisp. With simple separation and airtight containers, the boxes hold well in the refrigerator for several days.

Proteins and how they work together

This box combines a classic Italian cured meat with a lean deli protein for both flavor and substance. Prosciutto di Parma brings a salty, nutty, savory note; it pairs beautifully with a high-quality cracked pepper turkey breast. Using two slices of prosciutto per box keeps the portion modest while adding flavor, and 4 ounces of cracked pepper turkey boosts the overall protein to satisfy most appetites. The turkey adds texture and stretches the prosciutto so you get the best of both worlds: rich cured meat flavor with a leaner protein base.

To assemble the roll-ups, divide 4 ounces of turkey into two 2-ounce portions, roll each portion tightly, and wrap each roll with one slice of prosciutto.

Tomato, mozzarella, and basil skewers

These skewers are a simple, fresh addition that reads instantly as Italian. Use wooden skewers trimmed to fit your box. Stack a cherry tomato, a mini mozzarella ball, and a fresh basil leaf repeatedly until each skewer has three mozzarella balls and accompanying tomatoes and basil. These little Caprese-style skewers add acidity and creaminess that balance the meats and hummus.

Roasted red peppers, olives, and balsamic

Drain roasted red peppers packed in water, chop them into bite-sized pieces, and combine them with 2–3 Kalamata olives in a small portion container. Add about 1 teaspoon of balsamic vinegar to brightenthe mix—this provides a tangy accent that pairs well with both the prosciutto and the mozzarella.

Other box components

Portion three dates as a sweet finish and include one sesame breadstick to add crunch and a little carbohydrate. Place 2 tablespoons of roasted red pepper hummus into a cupcake liner to keep it contained and prevent it from touching other items. Fresh figs would also be a lovely seasonal alternative to dates when available.

Eggnog: The Story Behind This Holiday Treat

Eggnog traces its roots to the medieval British posset, a warm milk punch often enriched with wine, ale, eggs, and spices. Over time the drink evolved: in colonial America, plentiful eggs and dairy on farms and cheaper Caribbean rums encouraged a local version that became a seasonal favorite.

By the 1800s, eggnog had earned a reputation as a rich, nourishing drink. Today’s classic American eggnog is typically made with eggs, cream, nutmeg, and rum. There are also many cultural variations worldwide—each region adapting the basic idea to local ingredients and tastes.

This recipe presents a Filipino-American take on the holiday classic: Latik Eggnog, where toasted coconut curds add a toasty, nutty depth that pairs beautifully with warm spices and dark rum.

Skip the Storebought Nog and Make This Instead

Store-bought eggnog can be convenient, but homemade always wins for flavor and texture. Here’s why making your own is worthwhile:

Simple to prepare – The technique is straightforward and well suited to home cooks of all levels.

Lactose-free option – Using coconut milk and cream creates a naturally lactose-free eggnog without sacrificing creaminess.

Superior taste and texture – Homemade eggnog is richer, airier, and more flavorful than many commercial versions, which often substitute egg, omit alcohol, or add excess sugar and stabilizers.

Our holiday tradition: building gingerbread houses while sipping eggnog.

Crafting a Filipino Holiday Classic

This Latik Eggnog blends familiar holiday spices with Filipino coconut traditions. Growing up with abundant coconut in Filipino cuisine inspired a coconut-forward version that stays true to eggnog’s indulgent spirit while remaining lactose-free.

We developed this recipe to share a drink that feels both nostalgic and fresh: rich coconut creaminess, warm nutmeg and cinnamon, the bright toasty crunch of latik, and the warmth of dark rum. It’s designed to be a holiday crowd-pleaser that also works for those avoiding dairy.

Latik: The Filipino Way to Unlock Coconut’s Richness

Latik refers to toasted coconut curds made by simmering coconut cream until the solids separate and then toasting them until golden brown. The result is intensely toasty and nutty with a pleasant crispness that makes it an ideal topping.

Latik is traditionally used on kakanin (Filipino rice-based desserts) such as biko and suman. In this eggnog, latik provides a crunchy, caramelized contrast to the drink’s silky body.

Preparing latik takes attention and about an hour, so we recommend making it ahead of time and refrigerating it until you’re ready to assemble the eggnog.

How to Store and Serve Eggnog

Store Latik Eggnog in an airtight container in the refrigerator. The alcohol helps preserve the mixture, but for best flavor balance we suggest aging up to 2–3 weeks. After that, flavors may become too pronounced; if the taste is too strong, dilute with freshly made eggnog.

Serve chilled, with or without ice. If the texture settles in the fridge and loses some airiness, gently rewhip with a milk frother or a quick whisk with an electric mixer to restore a light texture.

Ingredients

Latik

13.5 oz coconut cream (see note below)

Latik Toasted Coconut Eggnog

6 eggs, separated

13.5 oz coconut milk

13.5 oz coconut cream

1 cup dark rum

½ cup sugar, divided

¼ tsp ground nutmeg

¼ tsp ground cinnamon

Latik for topping

Use a good-quality dark rum for balanced flavor. If available, Filipino lambanog (coconut spirit) can be substituted to emphasize coconut character.

Note: Choose coconut cream without added emulsifiers such as guar gum or carrageenan. Additives can affect taste and prevent proper separation when making latik.

Recipe

Make Latik

Bring the coconut cream to a gentle boil in a saucepan, then reduce heat to maintain a simmer.

Simmer, stirring occasionally to prevent sticking, for 45 minutes to 1 hour until the cream separates and the solids begin to curdle.

When curds form, stir less often so they can brown while avoiding burning. Continue until the curds turn golden brown.

Remove from heat, strain off the oil, and transfer latik to a paper towel to cool. Reserve for topping.

Be cautious of splattering while reducing cream.

Make Eggnog

Using an electric mixer, beat the egg whites until soft peaks form.

Add half of the sugar and beat until medium peaks form. Transfer the whipped whites to a separate bowl and set aside.

In the mixer bowl, beat the egg yolks with the remaining sugar until pale and slightly thickened. Add the coconut milk, coconut cream, nutmeg, cinnamon, and rum. Mix until smooth.

Fold one-third of the whipped egg whites into the yolk mixture to lighten it, then gently fold in the remaining whites until combined, preserving an airy texture.

Serve immediately in chilled glasses and top with toasted latik. Alternatively, chill the mixture in the refrigerator and age for 2–3 weeks for a deeper flavor.

Potatoes (thinly sliced)

Butter or margarine

Onion

Garlic

All-purpose flour

Salt and black pepper

Paprika

Milk (or half-and-half/heavy cream for a richer sauce)

Cheddar cheese, grated

Parmesan cheese, grated

Optional: fresh parsley for garnish

What kind of potatoes should I use?

You can use several varieties of potatoes. Red potatoes or russets work well; the key is to slice them uniformly so they cook evenly. Use a mandolin or a sharp knife to get thin, consistent slices of about 1/8 inch.

How to Make Air Fryer Scalloped Potatoes

Slice the potatoes about 1/8 inch thick using a mandolin or a sharp knife. Keep the slices even for consistent cooking.

Melt the butter in a saucepan over low-medium heat. Add the diced onion and minced garlic and cook for about 3 minutes until softened.

Add the flour, paprika, salt, and black pepper and cook for 1 minute to remove the raw flour taste. Whisk in the milk slowly, increase to medium heat, and bring the sauce to a gentle boil. Boil for one minute while stirring constantly to thicken the sauce.

Grease a baking dish that fits inside your air fryer basket. Layer half of the sliced potatoes, slightly overlapping. Pour half of the sauce over the potatoes, then sprinkle half of the cheddar and half of the Parmesan.

Add the remaining potato slices in a second layer, pour the remaining sauce over them, and top with the rest of the cheeses. Cover the dish tightly with aluminum foil.

Air fry at 360°F (182°C) for 30 minutes covered. Carefully remove the foil and continue to air fry for an additional 10–15 minutes until the potatoes are tender and the top is golden and bubbly.

Let the dish rest for a few minutes before serving. Garnish with chopped fresh parsley if desired, and serve hot.

Substitutions

Potatoes: Use any variety, keeping slices thin. Thicker slices will take longer to cook.

Aromatics: Red onion, yellow onion, or shallots work well. You can also use dried onion or garlic in a pinch.

Dairy: Swap milk for half-and-half or heavy cream for a richer sauce, or use lower-fat milk for a lighter version.

Cheese: White cheddar and Parmesan are used here, but Gruyère, smoked gouda, mozzarella, or provolone are tasty alternatives.

Variations

Add-ins: Layer cooked bacon, diced ham, sautéed mushrooms, or bell peppers between the potato layers for extra flavor.

Spicy: Add diced jalapeños or a pinch of cayenne to the sauce for heat.

Equipment

An oven-safe baking dish that fits inside your air fryer basket (an 8-inch round or square cake pan often works well).

Knife and cutting board (or mandolin for even slices).

Medium saucepan for the sauce.

Aluminum foil to cover during the first stage of cooking.

How to Store and Reheat

Refrigerate leftovers in an airtight container for 3–4 days.

Freeze wrapped in plastic wrap and foil for up to 2 months. Thaw overnight in the refrigerator before reheating.

To reheat in the air fryer: preheat to 350°F, place the potatoes in the dish, and heat for 3–8 minutes or until warmed through. Times vary by appliance.

3 Top Tips for Success

Slice potatoes uniformly so they finish cooking at the same time—use a mandolin if you have one.

Overlap slices slightly but avoid crowding too tightly so the sauce can circulate and thicken properly.

Check the potatoes after removing the foil; air fryers vary, so monitor the top to prevent over-browning.
