Before I switch off and enjoy two weeks of downtime with my favourite people, I wanted to share a festive cocktail I created: the Pomegranate Popper Cocktail.
Inventing a new cocktail can be surprisingly tricky — a quick search shows many ideas have already been tried and often given cleverer names than you first imagined. Still, I believe this Pomegranate Popper is fresh and fun, and perfect for the season.

My Pomegranate Popper Cocktail
Start with a wide-mouthed cocktail glass — the wider rim helps the pomegranate seeds join each sip for that satisfying pop. Spoon about one tablespoon of fresh pomegranate seeds into the bottom of each glass.
Add a single measure (about 25ml) of vodka, then top up with chilled Feel Good Cranberry & Pomegranate water. Make sure the juice is well chilled so you don’t need ice cubes that would dilute the drink or get in the way of the arils.
The result is light, fruity and refreshing. The vodka blends seamlessly into the juice, while the pomegranate seeds add bursts of extra juiciness and texture with every mouthful. It’s festive without being heavy, and easy to enjoy whether you serve it as a cocktail or a mocktail.
